Creole Braised Red Cabbage and Greens With Dates 

Yields 4-6 helpings

Ingredients


1 Red Cabbage Cored and Chopped

1 cup water

1/4  cup Trinity finely minced (red bell pepper, onion, celery)

1 -2 cups greens cleaned and chopped (any of your favorite: Kale, Turnips, Chinese greens)

1/4 cup balsamic vinegar

3 tablespoons oil or plant butter

6 pitted dates minced

1 tablespoon sugar

1 tablespoon Caribbean spice blend (Ginger, Garlic, Allspice, Salt)

2 teaspoons vegetable bullion 

1 teaspoon creole seasoning 

1 teaspoon red pepper flake

Sprinkle of ground clove

Salt and pepper to taste


Directions

  1. Cut the cabbage into quarters. Then separate the leaves of the cabbage. Cut away and discard the thick ribs, then chop the cabbage leaves into bite-size pieces.

  2. Heat the oil in a Dutch oven over medium heat. Add the Trinity blend and sauté until tender about 5 minutes add water if needed to keep from burning. Add all the remaining ingredients, stirring, until the cabbage wilts.

  3. Reduce the heat to medium-low, cover, and gently simmer, stirring occasionally, until most of the liquid has reduced. The cabbage should be tender and shiny in about 1 - 1.5 hours. Remove the cabbage from the heat and allow to stand for 5 minutes. Serve warm or at room temperature.
