Celebrate November with Vegan Basil Butter Spaghetti Squash and Meat Sauce

In celebration of squash season, we have delved into the delightful world of squash, transforming this versatile vegetable into a myriad of dishes and even drinks! This week, we invite you to join us in the culinary adventure as we kick things off with a delicious and hearty recipe: Vegan Basil Butter Spaghetti Squash and Meat Sauce.

Squash, with its rich flavors and nutritional benefits, takes center stage in this easy-to-make and satisfying recipe. Spaghetti squash, in particular, offers a unique twist to traditional pasta dishes. When cooked, its flesh separates into spaghetti-like strands, making it an excellent low-carb and gluten-free alternative to regular pasta.

Ingredients

For the Spaghetti Squash:

  • 1 large spaghetti squash

  • 2 tablespoons olive oil

  • Salt and pepper to taste

For the Meat Sauce:

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 8 ounces of vegan meat crumbles

  • 1 can (28 ounces) crushed tomatoes

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper to taste

Or a jar of your favorite sauce!

For the Basil Butter Sauce:

  • 1/4 cup vegan butter

  • 2 cloves garlic, minced

  • 1/4 cup fresh basil, chopped

  • 1 tablespoon nutritional yeast

  • Salt and pepper to taste

Instructions

1. Prepare the Spaghetti Squash:

  • Preheat your oven to 400°F (200°C).

  • Cut the spaghetti squash in half lengthwise and scoop out the seeds.

  • Drizzle the inside of the squash with olive oil and season with salt and pepper.

  • Place the squash halves cut side down on a baking sheet and roast for 40-45 minutes, or until the flesh is tender and easily pierced with a fork.

  • Once cooked, let the squash cool slightly. Use a fork to scrape the flesh into spaghetti-like strands. Set aside.

2. Make the Meat Sauce:

  • While the squash is roasting, heat olive oil in a saucepan over medium heat.

  • Add the chopped onion and sauté until translucent, about 5 minutes.

  • Stir in the minced garlic and cook for another minute.

  • Add the vegan crumbles and cook according to package directions

  • Add the crushed tomatoes, dried oregano, and dried basil. Season with salt and pepper.

  • Bring the sauce to a simmer and let it cook for 15-20 minutes, stirring occasionally, until it thickens.

3. Prepare the Basil Herb Butter Sauce:

  • In a small saucepan, melt the vegan butter over medium heat.

  • Add the minced garlic and cook for 1-2 minutes, until fragrant.

  • Stir in the chopped basil and nutritional yeast. Season with salt and pepper.

  • Remove from heat and set aside.

4. Assemble and Serve:

  • Toss the roasted spaghetti squash strands with the basil butter sauce, mixing well.

  • Serve the spaghetti squash with a helping of the meat sauce on top.

  • Garnish with extra fresh basil and vegan cheese shreds if desired.
