2 cups of water as needed

White onion chopped (optional garnish)

Cooking Instructions:

  1. Heat the Oil: In a large pot, heat the olive oil over medium heat.

  2. Sauté Onions and Garlic: Add the diced onions and sauté until they are translucent, about 5 minutes. Add the sliced garlic and chopped hot pepper, and cook for another 2 minutes until fragrant.

  3. Add Spices and Vinegar: Stir in the smoked paprika and cook for 1 minute. Add the apple cider vinegar, allowing it to deglaze the pot and incorporate the flavors.

  4. Add Liquid and Broth Base: Pour in the water and add the liquid smoke, sugar, and vegetable broth base. Stir well to combine.

  5. Add Collard Greens: Add the chopped collard greens to the pot, stirring to ensure they are well-coated with the mixture. Bring the mixture to a boil, then reduce the heat to low and cover the pot.

  6. Simmer: Simmer the collard greens for about 2 hours, stirring occasionally, until they are very tender and infused with flavor. Add water as needed once the greens begin to cook down. Cooking times may vary depending on the level of tenderness you desire the greens to have.

  7. Season: Stir in the kosher salt, tasting and adjusting seasoning as needed.
